Thanks so much for posting those pics, I really love how the markings have changed over time.
Many dried foods contain Astaxanthin which has been known to bring out the color red in fish. Maybe this is responsible for the red you're seeing? Since the fish is has both O&W and B&W ancestors, I'd expect them to have the darker almost mocha colored orange which tends to look red to me. I'm not sure if clam meat contains high levels of astaxanthin.
